Orange sugar cookies

These cookies are so delicious, and so quick and easy to make that it would be a shame not to pass along the recipe.

3/4 cup butter, softened
1 cup sugar
1 egg
1 tsp vanilla
1 tsp baking powder
a dash of salt
2 cups flour
2 Tbsp orange peel, finely shredded

an additional 1/3 cup sugar

Preheat oven to 375.

Beat the butter until fluffy, then add the cup of sugar.  Beat until light in color.  Add the egg and vanilla, then the flour with the salt and baking powder.  Last, mix in the orange peel.

Shape dough into 1 inch balls.  Roll in the extra sugar to coat.  Place on ungreased cookie sheets, then flatten each cookie with the bottom of a glass - just tap lightly.

Bake for about 8 minutes or until just lightly browned.  Cool and enjoy.  The recipe makes about 50 cookies and is easily doubled.
