1 lb ground pork

2 cups soft bread crumbs
2 eggs
1/2 cup finely chopped onion
2 Tbsp chopped parsley
2 tsp salt
4 Tbsp butter
10 oz apricot preserves
1/2 cup barbecue sauce
Preheat oven to 350F. Combine the first 7 ingredients and shape into meat balls. Brown in butter, then place in a casserole dish. Combine preserves and BBQ sauce and pour over meatballs. Bake for 30 minutes.
This dish can be cooked, frozen and reheated.
The sauce is also delicious over meatloaf.
